Sushi Rolls

Happy Monday! ( or Sunday night in my case) I'm at work so I figured I'd share this great recipe my co-worker introduced to me! It's making my own sushi rolls! They were awesome.. 

 So I'm here to tell you how I made mine. 


















Ingredients:






3 tablespoons rice vinegar


1 tablespoons granulated sugar


1 teaspoons salt


1 cups uncooked Japanese medium-grain sushi rice



3 sheets of sushi nori (seaweed in big squares)






cream cheese


1 avocado


1 tomato (I used cherry tomatoes)



Fresh-squeezed
lemon juice



Soy Sauce














In a medium saucepan, bring 1 1/3
cups water to a boil. Add rice, and stir. Reduce heat, cover, and
simmer for 20 minutes. In a small bowl, mix the rice vinegar, sugar ,and
salt. Blend the mixture into the rice.


 
Let rice cool.
Cut the avocados in half
lengthwise and sprinkle the them with lemon juice to keep from discoloring. Wash and slice up the tomato as well.





Center one sheet nori on a
bamboo sushi mat. Wet your hands. Using your hands, spread a thin layer
of rice on the sheet of nori, and press into a thin layer. Arrange avocado and tomatoes in the center of the rice. Lift the end of the mat, and gently roll it over
the ingredients, pressing gently. Roll it forward to make a complete
roll. Repeat with remaining ingredients.





Cut each roll into 4 to 6 slices using a wet, sharp knife.

Chicken, Kale & Cucumber

So my mom's friend showed us a recipe that I couldn't help but to tell you all about! I never liked hot lettuce, and never even had tried kale before.... but this recipe is like heaven for dieters!!!! 









What you'll need



3 chicken breast

1 bag of cooking kale

1 large cucumber

2 Tablespoons Spicy brown mustard

Garlic

Pepper to taste

Ginger powder





You first start off by cooking the chicken with seasonings garlic, pepper, and ginger powder. 



When your at the end of cooking the chicken all the way, add sliced up cucumber, your rinsed kale, and spicy mustard..



Yes it's that simple! Now go tell everybody!! =) Enjoy!

Cooking with Cauliflower

When it's cold outside there are so many recipes to make, but my favorite has to be anything with cauliflower in it! Here are some recipes I love to have in the winter time...



Cauliflower Cakes 


1 small head cauliflower
2 eggs
1/4 cup mined onion to taste
1/4 cup chopped parsley
1/2 cup shredded Parmesan cheese
salt to taste
Coconut oil for frying



Directions



Start by removing the leaves and any green stems from a head of fresh
cauliflower. Place the cauliflower in a large pot of boiling water. Boil
until it is soft. And by "soft" I mean if you stick a spoon in it, the
spoon should sink into the cauliflower. at this point I throw my
cauliflower into the blender for a few seconds. It will smoosh very
easily, I promise.In a large bowl, combine the eggs, onions, cheese, and
parsley. Then add the mashed cauliflower and mix it all up a little
more. Heat a bit of oil in a large skillet. Add a few heaping
spoonfuls of the cauliflower mixture.They're done when both sides are
golden brown.
Drain some of the oil from the Cauliflower Cakes by placing them on a paper towel. Salt lightly and serve.

Roasted Garlic Cauliflower



2 tablespoons minced garlic

3 tablespoons olive oil

1 large head cauliflower, separated into florets

1/3 cup grated Parmesan cheese

Salt and black pepper to taste

1 tablespoon chopped fresh parsley


Directions 


Preheat the oven to 450 degrees F (220 degrees C). Grease a large casserole dish. Place the
olive oil and garlic in a large resealable bag. Add cauliflower, and
shake to mix. Pour into the prepared casserole dish, and season with
salt and pepper to taste. Bake for 25
minutes, stirring halfway through. Top with Parmesan cheese and parsley,
and broil for 3 to 5 minutes, until golden brown

Cream of Cauliflower Soup II



    2 tablespoons butter

    1 large onion, chopped

    4 cloves garlic, minced

    2 large potatoes,peeled and cubed

    2 carrots, chopped

    2 (14.5 ounce) cans chicken broth

    1 head cauliflower, chopped

    1 cup milk

    1 teaspoon salt

    1/2 teaspoon ground black pepper

    1/8 teaspoon ground nutmeg

    1 tablespoon dry sherry

    1 tablespoon chopped fresh parsley



Directions


In a large
pot over medium heat, melt butter. Stir in onion and garlic and cook
until onion is translucent, about 5 minutes. Stir in potatoes and
carrots and cook 5 minutes more. Pour in chicken broth and bring to a
boil. Stir in cauliflower, cover, reduce heat and simmer until
vegetables are tender, 10 to 20 minutes. Remove from heat. 
Puree in
batches in a blender or food processor, or in the pot using an immersion
blender. Return to low heat and stir in milk, salt, pepper, nutmeg and
sherry. Heat through. Serve garnished with parsley.

Gluten-Free Nirvana Bars



Gluten- Free Nirvana Bars.







1/2 cup butter (smart balance)

1 1/2 cups gluten-free chocolate cookies processed into crumbs

1 cup semi-sweet chocolate chips

1 cup sweetened flaked coconut

1 cup chopped almonds

1 14-oz. can sweetened condensed milk



Preheat the oven to 350 degrees F.



Place
the butter in a baking pan and set it in the oven until the
butter is melted. Tilt the pan to coat the bottom evenly.




Sprinkle
the cookie crumbs in the buttered pan and toss them to coat; press them
into a layer. Pour the condensed milk in the pan. Add a layer of
chocolate chips, then a layer of coconut, then almonds. Using the back
of a spatula, press the mixture firmly into the pan.




Bake at 350 degrees F for about 20 to 25 minutes, until set.
Cool completely on a wire rack. 

Chill before cutting.
Makes 15 to 20 bars.

Decorating and Carving Pumpkins


yeah Halloween is over, but pumpkin carving is not! 



if you keep up with me on Facebook

you know that I refused to pay $5 for a little ugly pumpkin.

(which they were selling at Walmart)



Well we went to a lot of pumpkin patches 

and spent a lot of money.



They got me when I walked up with only a few pumpkins 

and said it was by donation. I only had a 20 dollar bill

I felt wrong asking for change back.

Chicken Cordon Bleu







I never knew it was this easy to make! LOL 





You will need ; 

2 chicken breasts

4 slices of ham

4 slices of cheese

1.5 cups bread crumbs

1 egg








1. Put the egg in a bowl and whisk. Put the bread crumbs in a separate bowl


2. Use a meat tenderizer to pound out the chicken til it's very
thin




3. Put your ham and cheese on 


4. Roll them up


5. Dip each chicken roll-up in egg and roll in bread crumbs


6. Put in a baking dish and bake at 350 degrees for about 30 minutes

somethin new..




 for breakfast

 I made these this yesterday and had to share!




it's simple ! just spray the muffin pan with PAM. 

put a biscuit in the bottom of the pan

place pieces of ham

next the tomatoes

add cheese

 then the egg

bake at 350 for about 15-20 minutes!

DIY Finger Paint!











Josiah loves to get into things

 that are messy.


What boy doesn't, right?! So what better way to make a 


mess then by playing with

 finger paints on a 

rainy day like today!


..needless to say, they had fun. 









It’s totally edible (though not that delicious!) and completely 


non-toxic, and the best part is it was so easy to make























What you'll need:


3tbs sugar


1/2 teaspoon of salt


1/2 cup of  corn starch


2 cups of water

6 containers (to put the finger paint in)





 mix everything together in the pot.




 Put it on (low)




It will get thicker & when it does.. take it off the heat & let cool





separate in the jars, 


then add the coloring





for your information. this is my second time making this.


The first time I made it.. it went to the trash because after 


a few days of not having containers to 


put it in, it molded!!! GROSS!!


So be better safe then sorry. if you don't use all of this in 


 one play time... just toss it!!!

DIY Coffee Creamer













I really wish I would have known this earlier! I don't remember where I got them exactly, but I'll share the one I made and use on a regular now!! 





Ingredients:

14oz sweetened condensed milk
1
3/4
cup milk or cream (whole, lowfat, skim, almond, soy, heavy cream,
half & half etc)








*Hazelnut Creamer*

2 teaspoons hazelnut extract











Mix the ingredients together well. Add
them to an old (washed) creamer container. 



 



 


How easy was that?! All simple ingredients that we all probably have in our homes and never have to waste money on creamer again!   



Here are some others that I found interesting, some of these you will need to heat up. Anything
that has a dry or thick ingredient (like cinnamon, honey, etc..) should
be heated up with a small amount of your milk/cream from the base recipe
so it can dissolve properly. You don’t want grainy creamer! Then, add
the rest of the milk/cream along with the sweetened condensed milk.






Irish Cream creamer (you'll need to heat this one up)

2 tablespoons chocolate syrup

1 teaspoon instant coffee
1-2 teaspoons vanilla extract
1 teaspoon almond extract


(along with the can of condensed milk & 1 3/4 cream)




Cinnamon Cake creamer (you'll need to heat this one up)
2 teaspoons cinnamon
2 teaspoons vanilla extract
 






French Vanilla Creamer
2 teaspoons vanilla extract OR vanilla coffee syrup

HEAVEN on a skewer!




Yes, i'm up late... eating this!!... 


This things are addicting! So while i'm eating

and watching Law & Order Season Premiere!! 


i'm going to share with you how I made them






Ingredients:


  • 1 carton of strawberries

  • 1 box of white cake mix

  • 3/4 cup of Greek vanilla yogurt

  • 2 egg whites

  • 1 1/3 cups of water

  • 1 bag of white chocolate chips

  • Skewers






Combine the cake mix, greek yogurt, egg whites and water in a bowl. 

Mix until smooth and pour into a greased cake pan or dish. Bake at 350 until 

toothpick comes out clean. While your waiting for the cake

to cool down..wash and cut the ends off the strawberries. 

Dry & slice each one as big as you want them to be on the skewers.















Cut the cake into squares.. again size them how you want to fit on the 

skewers. Place cake and strawberries onto the skewers..

I did it in an alternate pattern.





Melt the chocolate in the microwave. Now, when I tried making this 

the first time... no one told me that you can burn chocolate chips.. 








This cup will not melt if its full of chocolate chips.. 


they WILL burn



so I had a recipe #FAIL.. had to get another bag of white choc chips and 

try again.. burnt the damn things again on the stove 









BUT THEN.. I found this button on this wonderful 

thing called a microwave! 










 NOW after you haven't burnt the damn chocolate...

drizzle it over all of the skewers. 






I lined my tray with aluminum foil to avoid a big mess!




Let them cool then serve!

Never have I ever...


....been this excited to do laundry!! 

I've had this post on hold for a while, never had the chance to get all of the ingredients, until last night! I googled it when I first started blogging in January.. gathered everything last night and this is what I came up with! 



Laundry Detergent;

1 box of borax

1 box arm & hammer baking soda

1 box super washing soda

3 bars fels-naptha soap

1 containers of oxi clean


a big mixing container ( and in my case to leave it in)


a cheese grater 





shred the fels-naptha soap.. but not your finger!

funny it looks like cheese!






mix it all up and that's it! 





Now I couldn't finish this post & not have the softener!



Softener ;


1 1/2 bottles of distilled white vinegar

1 bottle of hair conditioner (used suave from the dollar tree) 


6 cups boiling water

1 mixing utensil

a pot

container to put it in (makes about 10 cups)






first you bring water to a boil




add the vinegar & the conditioner








Stir it up a little 






Store 




I used about a 1/2 cup in the rinse cycle of your washer or you can wet a washcloth and throw it in the dryer with your clothes.













It's so crazy how goooood it smells!!!! I did a load of laundry last night, and so far so good! Everyone said they hope I don't break out in bumps LOL Let's hope none of us do! We spent about $21.00 on these items.. It's real cheap and easy! This was totally not a #DIYFAIL!!! yayy for me! 





Want to save even more on doing your laundry? Hang the clothes on a clothes line to dry halfway and then throw themin dryer with a washcloth with fabric softener on it.
